The bar industry has spent the last twenty years inheriting techniques from chemistry labs, kitchens, pharmacies, and Japanese craft tradition without quite knowing where any of it came from. Some of that is wonderful. Some of it is cargo-cult imitation that we keep doing because we saw someone else do it. Stories is the section where I will try to mark the difference, name the lineage where I know it, and admit the gaps where I don't.
